Culinary Tasting, Legendary Oxtail Soup

Oxtail soup is made with oxtail. There are at least five versions of oxtail soup that are popular around the world: traditional Korean food, Chinese food that is more like stews, fried/roasted beef tail mixed with various variations of soup is a popular food in Indonesia, ethnic Southern United States food that has existed since the pre-revolutionary war period, and thick and savory gravy soup that has been popular in the United Kingdom since the 18th century. Creole oxtail soup is made from tomatoes with oxtail, potatoes, green beans, corn, mirepoix, garlic, and spices.


Oxtail Soup ⁣

MATERIAL :.⁣

🐄 Oxtail 2 kg⁣

🐄 3 onions (thinly sliced)⁣

🐄 15 garlic cloves (geprek)⁣

🐄 10 cloves shallots (geprek)⁣

🐄 3 galanthse (thinly sliced) ⁣

🐄 3 ginger segments (thinly sliced)⁣

🐄 10 Celery Sticks (cut²)⁣

🐄 5 stems of pre leeks (cut²)⁣

🐄 3 potatoes (diced)⁣

🐄 5 carrots (diced)⁣

🐄 (diced) tomato ⁣

🐄 Lime⁣

🐄 Black pepper⁣

🐄 Pepper powder⁣

🐄 Salt⁣

🐄 Beef broth⁣

🐄 Flowers⁣

🐄 cardamom⁣

🐄 Cloves⁣

Note; Tomatoes, Celery leaves & Lime are not cooked, only to complement when serving.

HOW TO COOK : .⁣

🐄 Put oxtail in boiling water (FYI when boiled if oxtail does not remove black dirt / foam, boiling water does not need to be replaced, because oxtail that if boiled does not remove feces means good quality)⁣

🐄 Put the flowers of lawang, white cardamom, cloves, galanth, ginger into the oxtail boiled.⁣

🐄 Meanwhile heat the butter, add the onions, leeks, shallots, sautéed garlic until wilted.⁣

🐄 Then put the sautéed onions in the oxtail stew, and put the celery sticks, black pepper powder, ground pepper, salt, beef broth, stir ⁣

🐄 Lighten the heat, leave to kurleb 3 hours.⁣

🐄 An hour before it's cooked, put the carrots & potatoes in ⁣

🐄 Once cooked serve with tomatoes & lime.⁣
